Chunky Potato Soup Recipe

It seems like winter just won’t go away.  More cold, more snow…..so….we need more soups.  I promise this will warm you up!  Enjoy!

Chunky Potato Soup

7 medium potatoes peeled and cubed

½ cup onion

1 small carrot chopped

½ cup chopped celery

2 ½ cups chicken bone broth

3 tbs butter

3 tbs flour

2 ½ cups milk

1 cup diced ham or bacon

1 cup Co-jack cheese

Salt and pepper to taste

In a large saucepan, combine the potatoes, onion, carrot, celery and broth.  Bring to a boil.  Reduce the heat; cover and simmer for 12-15 minutes or until veggies are tender.

Meanwhile, in a large kettle, melt butter; stir in flour until smooth.  Gradually stir in milk.  Bring to a boil; cook and stir for a couple of minutes until thickened.  Add in the potato mixture.  Cook and stir until bubbly.  Add salt and pepper to taste and stir in cheese and ham/bacon.  Serve once heated through.

  1. This looks great! I’ve been all about the soups during our never-ending winter. I’ll actually miss them when the weather warms up, but I can’t pretend I don’t long for warmth and sunshine . . .
