Grandma’s Pumpkin Oatmeal Pancakes – Your Kid’s All-Time Favorite

Pumpkin is packed with nutrition and I love all things about pumpkin. And that’s why I celebrate pumpkin-themed week every year. I also have an emotional attachment with these deliciously healthy pumpkin oatmeal pancakes.

One morning, my brother and I woke up and went to the kitchen, starving! And we noticed that grandma was cooking these tasty pancakes. Even today, it takes me back to that morning – whenever I smell it while cooking – mmm!

These delicious pancakes are super easy to make – you just need a blender, a griddle for pancakes, and require no flour and naturally dairy-free & gluten-free.

What I like most about these yummy pancakes is that they are a great treat for breakfast with almond butter + pure maple syrup or drizzle of salted peanut. Another best thing is that these pancakes are just the right amount of thickness, plus they are perfectly fluffy on the side.

How To Keep Pancakes Warm

First of all, there is nothing good than eating pancakes immediately after finishing cooking. But if you have made so many of them and want to enjoy them later – then simply keep them in an oven (I use Breville bov450xl) at 200 degrees Fahrenheit until ready to serve.

How To Freeze Pancakes

If you have made a lot of pancakes and now you want to serve them at a later date – don’t worry. Now prepare a baking sheet to place the pancakes on it and keep it in the freezer for about 30 minutes.

Now you need to transfer the pancakes in freezer-safe containers and you can easily freeze them for up to 3 months. When you are ready to enjoy the delicious pancakes – simply place them to an oven-safe plate and warm for 30 to 60 seconds.

How To Make Pumpkin Oatmeal Pancakes

These super deliciously healthy pumpkin oatmeal pancakes are very easy to make and require ingredients such as oats, pumpkin pie spices, pumpkin puree, and maple syrup. These deliciously fluffy pancakes can be made right in your blender and by using a pancake griddle – that it!

You can keep warm the pancakes in an oven at 200 degrees Fahrenheit for later. But if you want to enjoy the best taste out of it – then serve them immediately on the table without making any delays.

Ingredients:

2 tsp vanilla extract

2/3 cup of vanilla almond milk, unsweetened (or milk of choice)

2 large eggs

½ tsp allspice

1 ½ cups of old-fashioned rolled oats – gluten-free (if desired)

1 tsp ground cinnamon

Olive oil – for cooking

½ tsp ground ginger

½ tsp nutmeg

¼ tsp salt

¾ cup of pumpkin puree

1 tbsp pure maple syrup

2 tsp baking powder

Tips:

  1. I basically start my cooking on medium heat and reduce the heat to medium-low – so that I can get fresh, delicious pancakes and prevent burning as well.
  2. If your griddle starts smoking at any point – it means the griddle is way too hot. Don’t worry – wipe the skillet clean and repeat the cooking with the remaining batter and use more oil also.
  3. 1 ½ tsp of pumpkin pie spice would be a great alternative instead of spices. Feel free to replace the spice if you desire.
