My 4 Favorite Low Carb Chaffle Recipes

Following a keto diet certainly comes with interesting ideas and recipes. When I first learned about the diet, it was fun to try out the different, low carb concoctions that people would post or write about. Over time, I have found a few recipes that are simple to make and contain ingredients I already have, plus they are full of flavor and enough to have for a snack or even a meal. This is definitely one of them.

Sometime this past summer, there was a new craze that seemed to blow up Pinterest and it included a mini, single-waffle maker machine…as in a device that makes just ONE, small waffle. The whole idea was that people could mix cheese and eggs to make a bread substitute about the size of a hamburger bun to be used for hamburgers, sandwiches, pizzas, etc. Thus, the ‘chaffle’ was born. Of course, because I never want to miss out on experimenting with food, and I just happened to find a mini waffle maker at Kroger on sale for $7, I was all in!

Over time, I found out what worked and what didn’t, what flavors mixed the best, and how to make just the right portions for the sizes I wanted. My main issue was I spent hours in the kitchen because I could only make ONE (did I say one?) chaffle at a time! So I just had to purchase a waffle maker that produced four chaffles (thank you, Amazon!).

Here is the basic chaffle recipe, followed by additional ones that I tried and enjoyed.

  1. Heat your waffle/chaffle maker according to the product instructions.
  2. In a small bowl, beat one egg and add in cheese. Stir. The consistency should be thicker. If too liquidy, the egg will run in all different directions in the waffle/chaffle maker. You can add more cheese or even almond flour (1-2 Tbsp) to thicken.
  3. Pour batter into the middle of the waffle/chaffle maker and close the lid.
  4. Let the chaffle cook until the steam stops, usually about 4-8 minutes depending on your ingredients and the waffle/chaffle maker.
  5. Remove from the waffle/chaffle maker and serve alone or with toppings.

Now here are 4 favorite chaffle recipes that I enjoy the most, as do my husband and children. I love onion rings and fried pickles, which made me really love the first two types. Make the chaffles just the same as above. If you use a multi-waffle maker, you can pour the mixture into each section or right in the middle to create a round chaffle that can be divided into four pieces.

The amount of cooking time depends on the ingredients, so just keep checking once the steam stops escaping from the waffle maker.
