Breakfast Brunch Casserole

Start your cold morning off with a Breakfast Brunch Casserole.  I promise….. you will have a spring in your step to start your day!

½ lb. breakfast sausage (ham or bacon can be substituted)

¼ c chopped onion

¼ c chopped green pepper

6 eggs

½ c milk

2 c shredded cheese

2 c diced cooked potatoes (1/2 bag of diced frozen potatoes thawed can be substituted)

Salt and pepper to taste

In a skillet, cook sausage along with the onion and green pepper.  In a separate large bowl, beat eggs and milk.  Stir in potatoes, 1 cup cheese, salt, pepper and sausage.  Transfer to a greased 9 x 9 inch baking dish.  Top with remaining cheese.  Bake uncovered at 350 degrees for 1 hour or until knife inserted near the center comes out clean.  Batch can easily be doubled.  Leftovers are great to warm up during the week.
