Hearty White Bean Soup – Lenten Special

With Lent upon us, this is a great simmering soup to serve.  Enjoy!

5 pints chicken bone broth

2 cups dry white beans

1 cup carrots chopped

1 cup celery stalks chopped

1  medium onion chopped

1 tbs butter or olive oil

salt and pepper to taste

In a large pot, cook butter (oil) and veggies until soft (5-10 min).  Add broth and beans and bring to a boil; then simmer for an hour.  Transfer to crockpot and continue cooking on low for 2-3 hours or until beans are soft to consistency.  Do not overcook as soup will become less brothy.  Salt and pepper as needed!

**Add more or less veggies depending if you like a thicker soup or more brothy soup.
