Rhubarb/Apple Crisp Recipe

Rhubarb is still plentiful in my garden and I love rhubarb recipes. Here’s a favorite I made for a family gathering a couple weeks ago.   Family LOVED the idea of baking the rhubarb with apples. It’s a pretty easy recipe so your little ones might want to help you make it. Enjoy!

Rhubarb/Apple Crisp Ingredients

¾ c sugar

3 tbs cornstarch

3 c fresh rhubarb or frozen, thawed

2 c sliced/peeled apples

½ c old fashioned oats

¼ c brown sugar

1/4 c melted butter

1 ½ tbs flour

1/2 tsp ground cinnamon

Directions

In a large bowl, combine sugar and cornstarch. Add rhubarb and apples; toss to coat. Spoon into an 8 inch square baking dish.

In a small bowl, combine oats, brown sugar, butter, flour and cinnamon until mixture is coarse. Sprinkle over fruit. Bake at 350 degrees for 45 minutes or until fruit is bubbly and tender.

Yields 8 servings. Recipe can easily be doubled for a 13 x 9 pan.
