Basic Chicken Noodle Soup

We love our soups and here’s an all time favorite for us.   Very simple and easy for anyone to make!  Enjoy!

1 tbs olive oil

1 small onion, finely chopped

2 carrots,  chopped

2 stalks celery, chopped

5 ½ cups of chicken bone broth or chicken broth

3 cups water

Pepper to taste

1 1/2 skinless, boneless chicken breast

10 oz homemade egg noodles (or as much as preferred)

  1.  Heat olive oil.  Add onion, carrots, celery and cook until tender and lightly browned.  Stir often.
  2. Add broth, water and pepper and chicken.  Heat until boiling and simmer until chicken is no longer pink.
  3. Remove chicken and cut into pieces then add back into soup.
  4. Add noodles.
  5. Cook until noodles are done.
