Summer is my time of the year.  I love the heat and not wearing socks for several months , but I also love fall because it is PUMPKIN SEASON!!  Who doesn’t love all the pumpkin flavored items that are everywhere once September rolls around?  I sure do.  Hope you do also.  Enjoy this awesome soft cookie recipe.  My family just devours them in no time.  I’m sure your family will too!

Ingredients

2 cups white flour
½ cup wheat flour
1 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
½ tsp salt
½ cup softened butter
1 ½ cups sugar
1 cup pumpkin puree
1 egg
1 tsp vanilla

Directions

Preheat oven to 350 degrees. Combine flours, baking powder, baking soda cinnamon and salt and set aside.

In another bowl, cream together butter and sugar. Add pumpkin, egg and vanilla into butter mixture and beat until creamy. Mix in dry ingredients. Bake for 15 to 20 minutes.
