Side dishes, side dishes…what to have with that special meal?  I am sometimes at a loss on what to have alongside my meat when preparing a large meal.  I’m old school, so usually meat is decided upon and then….what to have with it on the side? This recipe is a great no-brainer that anyone can quickly fix in the oven. I promise it won’t disappoint!


2 lbs small carrots, cut in half lengthwise

1 1/2 Tbsp olive oil

1/2 tsp Kosher salt

1/2 tsp Italian Seasoning (or more for more robust flavoring)



Preheat oven to 400 degrees.  Combine carrots, oil, salt and seasoning in a bowl and toss to coat.  Transfer to a large baking sheet and bake for 35-40 minutes or until tender, turning carrots after 20 minutes.  Enjoy!
